This delicious dish was inspired by a recipe that Lina of @thelebaneseplate had shared on her page. As I had some delicious Lebanese produce from @minbaladeh, I thought this recipe would be the best to bake!

INGREDIENTS
- 1 handful wild zaatar
- 1 handful green zaatar
- 2-3 spring onions,, chopped
- 1 whole garlic, head, halved
- 2 cups cherry tomatoes, halved
- 1 block halloumi, , washed, patted dry and cubed
- pinch of salt
- fresh black pepper
- dried zaatar
- extra virgin olive oil
- pomegranate molasses

Method
- 1)
Preheat oven to 180C In a large overproof dish, drizzle some olive oil then start adding the herbs, the tomatoes and the halloumi.
- 2)
I like to use my hands to mix everything and to ensure that every bit is coated in olive oil.
- 3)
Place 1 half of the head of garlic cut side up in the dish, and scatter the rest of the cloves from the other half all over the veggies and herbs.
- 4)
Drizzle some pomegranate molasses, season with salt, pepper and dried zaatar, gently mix then you have 2 options: -serve as it is, as a cold salad Or -bake in the preheated oven for about 30min or until the halloumi is melted and golden and the tomatoes are caramelised and all juicy.

In both cases, use pieces of arabic bread or pita bread to mop all the delicious juices. Yum!
