Halloumi and fresh zaatar bake. This looks like a salad, and you can have it as one, but when you bake it, it gets transformed into so much more! The caramelized tomatoes, the warm halloumi, the earthy zaatar and the juices make it the ideal warm salad to have with arabic (flat) bread. Yum!
Ingredients
- 1 handful wild zaatar
- 1 handful green zaatar
- 2-3 spring onions, chopped
- 1 whole garlic head, halved
- 2 cups of cherry tomatoes, halved
- 1 block of halloumi, washed, patted dry and cubed
- pinch of salt, fresh black pepper and dried zaatar
- extra virgin olive oil
- pomegranate molasses

In an oven proof dish, mix everything together and bake in a preheated oven at 180C for 30min or until roasted, fragrant and juicy.
