I was clearing the freezer when I found this log of cookie dough from last year! It was during lockdown and I had organized virtual baking workshops for my son’s classmates- and I was left with a lot of cookie dough. I double wrapped them in cling, then wrapped in aluminum and I have to say- they we’re still 100% AMAZING!!! The recipe is sooo easy,

I was clearing the freezer when I found this log of cookie dough from last year! It was during lockdown and I had organized virtual baking workshops for my son’s classmates- and I was left with a lot of cookie dough. I double wrapped them in cling, then wrapped in aluminum and I have to say- they we’re still 100% AMAZING!!! The recipe is sooo easy.

INGREDIENTS

  • ¾ cup unsalted butter, room temp
  • ½cup caster sugar
  • 2 ¼ cups plain flour.
  • Granulated sugar to roll
  • Orange zest optional

Method

  • 1)

    Cream the butter , add the sugar and beat until light and fluffy.

  • 2)

    Add the zest if using.

  • 3)

    Add the flour, beat in the machine for a couple of minute before tipping on your work bord and kneading by hand until the dough comes together.

  • 4)

    Shape into a log and chill (or freeze) until firm to the touch.

  • 5)

    You can also roll it in coarse sugar or sprinkles.

  • 6)

    Slice into 1 cm thickness disks, bake in a preheated oven at 180C until golden.

  • 7)

    Cool on a wire rack.

  • 8)

    Keep in an airtight container.

  • 9)

    If planning to freeze the cookie dough log, double wrap in cling film or plastic wrap then aluminum foil.
