For Ramadan, it is important to have recipes for desserts that can be prepared ahead of time. I made umm Ali with a twist using simple ingredients of excellent quality from SpinneysFOOD.
Ingredients
- 2 tbsp tahini or more for greasing the dish
- 2 boxes of mini croissants SpinneysFOOD
- 100 g halawa, cubed or crumbled
- 1 box fresh raspberries
- 4 cups whole milk SpinneysFOOD
- 1 cup whipping cream
- 4 large eggs SpinneysFOOD
- 3/4 cup honey SpinneysFOOD
- 1/2 tsp cardamom powder SpinneysFOOD
- 1 tsp ground cinnamon powder SpinneysFOOD
- 1 tsp orange blossom
- 50 g pistachios (more to decorate), chopped SpinneysFOOD
For the toppings
- 1/4 cup whipping cream
- 1/4 cup whole milk SpinneysFOOD
- 1/4 cup tahini
- 2 tbsp honey SpinneysFOOD
- Sesame seeds SpinneysFOOD
Method

Spread tahini over a 9 × 13-inch baking dish, tear the croissant and fill the dish. Add the berries, the chopped pistachio and the cubed halawa evenly all over the croissant, and toss to mix.

In a large bowl, whisk the milk, cream, eggs, honey, orange blossom, cardamom and cinnamon. Pour the mixture over the croissants, making sure to let the liquid soak in. Cover and let the dish rest for at least 30 min, or even refrigerate overnight so all the liquid is absorbed.

Preheat the oven to 180C.

In a small bowl, mix the tahini topping and whisk to combine. Pour all over the dish. Sprinkle some sesame seeds and bake until the top is golden but the inside is still very moist, about 40 to 45 min. You can add 10 min if you’re baking straight from the fridge.

Serve warm, straight from the dish.
