The quickest most delicious zaatar salad with pomegranate and feta. You can prepare it ahead of time and even season it with the olive oil and pomegranate molasses. Keep it covered until ready to serve.
Ingredients
- 1 cup fresh zaatar leaves, washed and dried
- 1/3 cup pomegranate seeds
- 1 shallot, thinly sliced (about 1/4 cup)
- 1/4 cup sliced green olives, pitted
- 100g feta cheese, crumbled
- Crushed walnuts (optional, for sprinkling)
- Pomegranate molasses, to taste
- Extra-virgin olive oil, to taste

Method

1In a large bowl, combine the zaatar leaves, pomegranate seeds, sliced shallot, green olives, and crumbled feta.

Just before serving, drizzle with pomegranate molasses and extra-virgin olive oil.

Toss gently to combine, then sprinkle with crushed walnuts if using.
