THE Fattouch dressing. Save this recipe, it is the one and only you’ll need for your Fattouch salad. This dressing is so good, you would want to drink it! Make a big jar and keep it in the fridge. Shake and drizzle on your Fattouch salad just before serving!
Ingredients
- 1.5 cups extra virgin olive oil
- 1/2 cup fresh lemon juice (with pulp)
- 1/4 cup pomegranate molasses
- 2 garlic cloves, crushed
- 3 tsp salt 2 full tbsp sumac
For the salad
- 1 bunch spring onions, finely chopped
- 1 medium red onion, finely chopped, soaked in some vinegar+ a pinch of sumac
- A handful of mint leaves (not chopped)
- 2 handfuls of purslane
- 5 cucumbers, diced small
- 1 romaine lettuce, finely chopped
- 3-4 medium tomatoes, diced small (no juice)
- A small handful of chopped parsley Radish, diced

Method

Place all the ingredients in a large jar with a tight fitting lid, shake until combined.

Keep in the fridge for up to a week.

Mix all the veggies in your serving bowl.

Drizzle the dressing and mix just before serving.

Enjoy with fried or toasted pita bread on the side.
