Easy Moist Pear Chocolate Cake

Ingredients

  • 2 pears, halved and cored, then sliced
  • 130g all-purpose flour
  • 30g cocoa powder
  • 50g dark chocolate, melted
  • 30g almond powder
  • 90g brown sugar
  • 90g butter, melted
  • 50ml milk
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Method

  • 1)

    Preheat your oven to 175°C.

    In a mixing bowl, vigorously whisk together the brown sugar and the three eggs until they are well combined. Add the vanilla extract and continue to whisk.

    Next, add the melted butter, the milk and melted chocolate to the egg mixture. Stir until the mixture is smooth and well combined.

  • 4)

    In a separate bowl, sift together the cocoa powder, all-purpose flour, baking powder, and baking soda.

  • 5)

    Gradually add the dry ingredients (cocoa no powder, flour, baking powder, and baking soda) to the wet mixture. Mix gently to prevent the formation of gluten and ensure the batter is not overmixed.

    Top the batter with the pears and press them slightly in. You can sprinkle some Demerara sugar and slivered almonds all around.

  • 7)

    Grease and line a 9-inch (23 cm) springform pan with parchment paper.

  • 8)

    Bake in the preheated oven for approximately 26-28 minutes or until a toothpick inserted into the center comes out clean.

  • 9)

    Once baked transfer it to a wire rack to cool completely.

  • 10)

    You can dust the cake with a little cocoa powder or powdered sugar for a decorative touch.
