Easy Double Chocolate Cookies

The easiest, most delicious cookies. They are crisp on the edges, chocolatey, chewy and so incredibly satisfying. They are made with just a handful of ingredients and are baked in 10 minutes! They are naturally dairy free and gluten free as well as refined sugar free but I wanted them extra indulgent so I added good quality milk chocolate chips. You can use sugar free or dairy free ones if you prefer.

The easiest, most delicious cookies. They are crisp on the edges, chocolatey, chewy and so incredibly satisfying. They are made with just a handful of ingredients and are baked in 10 minutes!

Ingredients

  • 1/2 cup almond flour (50g)
  • 1/4 cup plain flour (use oat flour for GF option)
  • 1/4 cup cocoa powder, unsweetened
  • 1/2 cup oats (50g)
  • 1/2 tsp baking powder
  • 1/4 cup honey or agave (45g)
  • 1/4 cup coconut oil (45g)
  • 1 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips of your choice

Method

  • 1)

    Mix the dry ingredients then add the rest of the ingredients and mix well until a dough forms.

  • 2)

    Create small balls and flatten lightly on a lined baking tray.

  • 3)

    Bake in preheated oven at 180°C for 10 min or until golden and crispy on the edges..

  • 4)

    Wait for a few minutes then carefully transfer to a cooling rack.

  • 5)

    Keep in an airtight container
