Cheat’s Black Forest! The holidays in the UAE officially start when Christmas hits @spinneysuae: real trees, festive shelves, and everything you need to cook, bake, host and breathe!
This week I’m making a super easy, light Black Forest cake you can prep up to 2 days ahead. Completely stress-free!

Ingredients

Chocolate genoise

  • 6 large eggs, room temp, organic SpinneysFOOD
  • 1 cup caster sugar, SpinneysFOOD
  • ¾ cup self-rising flour, organic SpinneysFOOD
  • ¼ cup cocoa powder

Cream layer

  • 200 g mascarpone, SpinneysFOOD
  • 500 ml whipping cream
  • 1/2 tsp vanilla extract (optional)

Berry coulis

  • 1 cup frozen blueberries, SpinneysFOOD
  • 1 cup frozen raspberries, SpinneysFOOD
  • 2 tbsp mixed berry jam, SpinneysFOOD
  • ½ cup water

To decorate

  • Fresh cherries
  • Grated dark chocolate

Method

  • 1)

    Chocolate genoise

  • 2)

    Preheat oven to 180°C.

  • 3)

    Line 2 or 3 round cake tin (8 inches).

  • 4)

    Whisk eggs + sugar for 8–10 min until pale and tripled in volume.

  • 5)

    Sift flour + cocoa over the bowl and fold gently with a spatula.

  • 6)

    Pour into tins and bake 18–25 min. Cool completely.

Cream layer

  • 1)

    Whip mascarpone + cold cream together in a cold bowl until medium-stiff peaks form. Keep chilled.

Berry coulis

  • 1)

    Simmer berries, jam, and water for 8–10 min until thick. Cool.

  • 1)

    Layer cake → coulis → cream → cherries. Repeat with second layer. Finish with cream on top, a swirl of coulis, cherries, and grated chocolate.

    Chill 1–2 hours before serving.
