A super fruity, super light dessert perfect for hosting! It has no eggs, no butter, and you can use all milk or add the Greek yogurt (and you can also omit the almond flour and use all normal flour). Super delicious and easy- please try it!

A super fruity, super light dessert perfect for hosting! It has no eggs, no butter, and you can use all milk or add the Greek yogurt (and you can also omit the almond flour and use all normal flour). Super delicious and easy- please try it!

Ingredients

  • 3/4 cup flour
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 3/4 - 1 cup caster sugar
  • 1/2 cup Greek yogurt (you can use all milk)
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 300 g frozen cherries or berries of choice
  • 1/4 cup coconut oil
  • Slivered almonds, to decorate (optional)
  • Icing sugar, to decorate (optional)

Method

  • 1)

    Preheat oven to 180°C

  • 2)

    Baking dish 27cm x 20cm

  • 3)

    Mix the dry ingredients.

  • 4)

    Add the milk, yogurt, and vanilla and whisk until smooth.

  • 5)

    Pour the coconut oil into your baking dish.

  • 6)

    Pour the batter on top of the oil, then sprinkle the frozen cherries on top.

  • 7)

    Decorate the outline with some almonds if desired.

  • 8)

    Bake for 50min until golden and puffy on the edges and gooey and bubbly around the cherries.

  • 9)

    Enjoy with Greek yogurt or vanilla ice cream.
