Cocobanana snacks or Coconut-Banana Cookies with Dark Chocolate and Pistachios! The idea is that you can start with just 1 banana, 1 egg and a handful of shredded coconut. Mix, form into discs and bake. Feel free to sprinkle extra coconut flakes then drizzle with melted chocolate once baked and cooled. The options are infinite! Now beware: this is a guiltless snack. Not super crunchy, not sweet but veryyyyy satisfying! Will you make these?

Cocobanana snacks or Coconut-Banana Cookies with Dark Chocolate and Pistachios! The idea is that you can start with just 1 banana, 1 egg and a handful of shredded coconut. Mix, form into discs and bake.

Ingredients

  • 150 g shredded coconut (I used fresh)
  • 1 large ripe banana
  • 1 medium egg
  • 1 tsp cinnamon powder (optional)
  • Melted dark chocolate for drizzling (optional)
  • Chopped pistachios for sprinkling (optional)

Method

  • 1)

    Preheat your oven to 180°C.

  • 2)

    In a mixing bowl, mash the large ripe banana until smooth.

  • 3)

    Add the shredded coconut and the medium egg. If using, add cinnamon powder. Mix everything together until well combined.

  • 4)

    Using a spoon, scoop out small portions of the mixture and shape them into little circles. Place them on a baking sheet lined with parchment paper.

  • 5)

    Bake in the preheated oven for 30 min or until the cookies are golden brown.

  • 6)

    Remove from the oven and let the cookies cool on a wire rack.

  • 7)

    Optional: Once the cookies are cool, drizzle them with melted dark chocolate and sprinkle chopped pistachios on top.

  • 8)

    Allow the chocolate to set before serving.

  • 9)

    Keep refrigerated in an airtight container.
