Brownie blondie bars. You’ll get the best of both worlds in every bite! Two secrets for the most decadent bars: don’t over mix and don’t over bake!

Ingredients

For the brownie layer:

  • 1/2 cup light brown sugar
  • 3/4 cup white sugar
  • 65g dark chocolate, roughly chopped
  • 125g unsalted butter
  • 2 large eggs, room temp
  • 2 tsp cooled coffee
  • 3/4 cup plain flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 60g dark chocolate, roughly chopped, extra

For the blondie layer:

  • 2/3 cup plain flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 60g unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1 large egg, room temp
  • 1 tsp vanilla extract, (or 1/2 vanilla pod scraped)
  • 60g milk chocolate, roughly chopped

METHOD

For the brownie layer:

  • 1)

    Preheat the oven to 180C.

  • 2)

    Line a 9×9 inch square pan with baking paper.

  • 3)

    In a large bowl, place the sugars, the chocolate and the butter. Microwave the mixture in short 20sec bursts, until the mix is fully melted (or melt over bain Marie). Whisk until smooth.

  • 4)

    Add the eggs and coffee to the now cooled mixture, and whisk until combined.

  • 5)

    Sift in the flour, cocoa powder, and salt and fold until just combined.

  • 6)

    Lastly, fold in the chopped chocolate.

  • 7)

    Lastly, fold in the chopped chocolate.

  • 8)

    Keep aside as you make the blondie layer.

For the blondie layer:

  • 1)

    In a large bowl, whisk together the melted butter and brown sugar until combined.

  • 2)

    Add the egg and vanilla.

  • 3)

    Sift in the flour, baking powder, and salt.

  • 4)

    Fold in until just combined.

  • 5)

    Add the chocolate and fold in.

To assemble:

  • 1)

    In the prepared square pan, add about 2/3 of the brownie batter and press to get an even layer.

  • 2)

    Keep about 200g of brownie batter for the top layer.

  • 3)

    Add the blondie batter in large spoonful’s on top of the brownie layer.

  • 4)

    Use the remaining brownie batter to fill in the gaps between the blondie batter.

  • 5)

    Using a spatula, marble the 2 layers and sprinkle with extra chocolate (optional).

  • 6)

    Bake for about 28-30 minutes when the blondie layer is golden and the brownie layer is set.

Notes

Allow to cool completely in the pan before removing.
Cut into squares and enjoy.
