The easiest recipe for a simple, delicious baked cheesecake. Not too sweet, you can serve it with berries, coulis or a caramel sauce. If you want a creamier texture, use the water bath cooking method, added below.
INGREDIENTS
- 900g cream cheese, room temp
- 3/4 cup caster sugar
- 1 tbsp vanilla extract
- 3 large eggs , room temp
- 2 cups whipping cream
- 1/3 cup plain flour
- 1/2 tsp baking powder
- 1/2 Zest of lemon , (optional)

Preheat your oven to 200C

In a large bowl, whisk the cream cheese, sugar and vanilla until light and fluffy.

Add the flour and baking powder and mix until incorporated. Whisk.
- 4)
Add the eggs then whisk. Add the cream then then whisk again until light and fluffy.

Line an 9” springform tin with a crunched up sheet of baking paper.

Pour the batter into the tin and bake for 40-45 minutes or until golden on the edges but still jiggly. It will set while cooling. See note below regarding water bath.

Leave to cool completely in the oven, with the oven door open then chill in the fridge overnight.
Notes
Ideally, this cheesecake should be baked in a water bath. That will allow it to cook slowly, at a more consistent pace and you will end up in a creamier consistency. All you have to do is wrap the exterior of the tin extra tightly in 2 layers of aluminum foil to make it water tight. Then bake it in a roasting tin filled up to midway in hot water from the kettle.
