A super easy and utterly delicious apple cake that everyone needs to have in their repertoire of home baked goods.
Ingredients
- 3 eggs
- 3/4 cup caster sugar
- 1/2 cup oil (coconut oil would be great if available)
- 2 cups SELF RAISING flour (NOT PLAIN FLOUR)
- 3/4 cup natural apple juice or milk
- zest of 1 unwaxed orange and 1 unwaxed lemon
- 1 tsp vanilla essence or you can use the seeds of 1 pod
- 1 tsp cinnamon

Method

Preheat oven to 180C.
- 2)
Grease and flour pan.
To top

Rolled oats, brown sugar and cinnamon.
- 2)
3 apples, peeled, deseeded. Cut each into 4 and score them thinly lengthwise.

Start off by whisking by hand the eggs and the sugar until well combined.

Next, add the sifted flour and alternate with the orange juice (or milk) mixed with the oil. Fold gently with a spatula.

Add the zest at the end- don’t over mix.

Pour in the cake pan and top with the apples in a circular way. Sprinkle some rolled oats, Demerara sugar and cinnamon before baking.

Bake at 180C for 35 min. Check with a skewer at 30 min. Inserted skewer should come out clean.
