I was clearing the freezer when I found this log of cookie dough from last year! It was during lockdown and I had organized virtual baking workshops for my son’s classmates- and I was left with a lot of cookie dough. I double wrapped them in cling, then wrapped in aluminum and I have to say- they we’re still 100% AMAZING!!! The recipe is sooo easy.
INGREDIENTS
- ¾ cup unsalted butter, room temp
- ½cup caster sugar
- 2 ¼ cups plain flour.
- Granulated sugar to roll
- Orange zest optional
Method
- 1)
Cream the butter , add the sugar and beat until light and fluffy.
- 2)
Add the zest if using.
- 3)
Add the flour, beat in the machine for a couple of minute before tipping on your work bord and kneading by hand until the dough comes together.
- 4)
Shape into a log and chill (or freeze) until firm to the touch.
- 5)
You can also roll it in coarse sugar or sprinkles.
- 6)
Slice into 1 cm thickness disks, bake in a preheated oven at 180C until golden.

Cool on a wire rack.

Keep in an airtight container.

If planning to freeze the cookie dough log, double wrap in cling film or plastic wrap then aluminum foil.
