I was challenged by @agronote.lb to create a recipe using an ugly fruit or vegetable, so i got these “ugly tomatoes”. To me, they were as perfect, as delicious and as tasty as any tomato- and even cheaper! Do you buy fruits or veggies labeled as “imperfect” or “ugly”? I challenge you to do so!
Ingredients
- 2 medium ripe tomatoes, roughly chopped
- 1/4 cup green zaatar
- 1/4 small onion, thinly sliced (or 2 green onions, thinly sliced)
- 1/2 cup finely shredded cabbage
- 1/4 cup pomegranate
- 1/4 cup feta, cubed or crumbled
- 1/4 cup black olives, pitted and sliced
- 2 tbsp chopped and toasted walnuts
- 1 tbsp pumpkin seeds
- Zest of half a lemon
- Balsamic vinegar
- Olive oil
- Salt
- Pepper

Method
- 1)
Layer all the vegetables and herbs in a shallow serving plate.
- 2)
Top with the feta, the nuts and seeds.
- 3)
Drizzle the balsamic vinegar and the oil, the lemon zest, then season with a bit of salt and lots of pepper.
- 4)
Serve immediately.
