This quick Asian-style roasted salmon is so delicious, super easy and too good not be in everyone’s entertaining repertoire. It is a crowd pleaser and looks very impressive, served simply with white rice and bok choy braised in the same marinade.

This quick Asian-style roasted salmon is so delicious, super easy and too good not be in everyone’s entertaining repertoire. It is a crowd pleaser and looks very impressive, served simply with white rice and bok choy braised in the same marinade.

For 6-8 people

Ingredients

  • 1 kg fresh Norwegian salmon
  • 3 tsp ginger and garlic paste (or use fresh, and mince)
  • 2 tbsp soy sauce
  • 1-2 tsp honey
  • 4 tbsp sesame oil

To decorate

  • Sesame seeds, toasted
  • 1 scalion (spring onion) sliced

Method

  • 1)

    Mix the marinade in a small bowl, whisk with a fork.

  • 2)

    Place the salmon on a large heatproof dish.

  • 3)

    Pour the marinade on top of the fish, trying to cover as much of the fish as possible. Massage it in. Place in the fridge for as long as you can, minimum 2 hours.

  • 4)

    When ready to bake, take the salmon out of the fridge and let it come back to room temperature.

  • 5)

    Preheat the oven to 220C (the high temperature will sear the fish, without drying it).

  • 6)

    When oven is very hot, reduce temperature to 200C and place the fish uncovered in the oven.

  • 7)

    Bake for 20-22min until cooked but not dried out.

  • 8)

    Sprinkle with toasted sesame seeds and sliced scallions.

  • 9)

    Serve with plain white rice and greens such as bok choy braised in the same marinade. Enjoy!
