Recipe of the most delicious tahini ginger soba noodles with garlic and date molasses.
I loved the technique of this recipe where the noodles and broccoli are boiled together then rinsed before getting pan fried with the sauce. The sauce is raw, blended then added to the wok with a bit of the cooking water.
Ingredients
- 200 g soba noodles
- 1 broccoli head, separated into small florets, stems cut and included
- 300 g raw shrimps, cleaned, tails on
- ½ tsp sea salt
- ¼ tsp ground black pepper
- 2 tbsp raw sesame seeds
- 2 spring onion, thinly sliced
- Sesame oil to cook (or alternative choice of oil)
Tahini GINGER SAUCE
- 4 tbsp tahini
- 2 tbsp soy sauce or coconut aminos
- 2 tbsp apple vinegar
- 2 cloves garlic, crushed
- 1 tsp grated ginger
- 2 tsp date molasses (or 1 date, as per original recipe)
- 1 tsp sesame oil
- 1 tsp sea salt
- ½ c pasta/broccoli cooking water (or a bit more, 3/4)

Method
- 1)
Put the soba noodles in a large pot of boiling water and and boil for 2-3 min max.
- 2)
Add the broccoli on top of the noodles mid way through cooking, and cook together for 3-4 min max.
- 3)
Drain and reserve 1/2 -3/4 cup of water from the broccoli and noodles, then immediately rinse them with cold water to stop their cooking. Drain well. Keep them aside.

Meanwhile, in a large wok, cook the shrimps in a little sesame oil.
- 5)
Season with a bit salt and pepper, and cook on each side until cooked though and crispy on the edges.

Add the sesame seeds to the pan for the final minute to toast them also.
- 7)
Remove to a small bowl and keep warm. Don’t wash the wok.
- 8)
Prepare the sauce by blending all the ingredients using a handheld or a small blender until smooth and creamy.
- 9)
Return the broccoli and noodles into the wok along with half of the shrimps, the sesame seeds, and the spring onions (reserving the rest of each to garnish).
- 10)
Toss gently using a pasta spoon or a spatula to combine the noodles and the broccoli with the sauce.
- 11)
Season to taste with extra soy sauce, chili flakes and pepper if you like.
- 12)
Serve directly from the wok in small bowls. Garnish with the shrimps, the some extra toasted sesame seeds, and the sliced spring onions.
