Easy, delicious and spicy! Add tajin spice if you like and you can use either fresh or frozen (thawed) corn. It is the perfect side dish.

Easy, delicious and spicy! Add tajin spice if you like and you can use either fresh or frozen (thawed) corn. It is the perfect side dish.

Ingredients

  • 2 corn on the cob
  • 3 tbsp Olive Oil
  • 3 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp salt black pepper
  • lime wedges, to serve
  • a small piece of feta cheese, crumbled, to garnish
  • coriander leaves, to garnish

To dip

  • Use the remaining marinade and add to it:
  • 2-3 tsp Greek yogurt (or labneh)
  • 1 tsp sriracha
  • 1 tsp mayonnaise (optional)

Method

  • 1)

    Boil the corn for 15-20min or until tender.

  • 2)

    After they cool enough to handle, carefully and with a sharp knife, cut the cobs into quarters, lengthwise.

  • 3)

    Mix together the olive oil and the seasoning. Brush on the corn ribs.

  • 4)

    Place them in the air fryer.

  • 5)

    Air fry for 12 minutes on 200°C, flipping halfway through the cook time.

  • 6)

    When the ribs are ready, serve them with some crumbled feta, coriander leaves and lime juice.

  • 7)

    Serve the dip on the side.
