Simple Tomato Sauce Recipe

The way I filmed is the way I felt on holiday.. Mellow, relaxed and craving some kitchen time. When i found those fresh round zucchinis at the market, as well as the ripe and juicy tomatoes, onions, garlic and fragrant basil, I knew I had to make petits farcis with a homemade tomato sauce. This is part 1, follow for part 2!

The way I filmed is the way I felt on holiday.. Mellow, relaxed and craving some kitchen time. When i found those fresh round zucchinis at the market, as well as the ripe and juicy tomatoes, onions, garlic and fragrant basil, I knew I had to make petits farcis with a homemade tomato sauce. This is part 1, follow for part 2!

Ingredients

  • 4 large ripe tomatoes
  • 1/2 large purple onion, finely chopped
  • 1 bunch of fresh basil leaves, torn by hand
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil
  • 2 large cloves of garlic, minced

Method

  • 1)

    Make two incisions in the shape of a cross on the bottom of each tomato, place them in a bowl, and cover them with boiling water. Let them stand for 5 minutes, then peel and chop the tomatoes.

  • 2)

    In a medium pot, heat a generous drizzle of olive oil over medium heat. Add the finely chopped onion, salt, pepper, and oregano. Sauté until the onion softens.

  • 3)

    Stir in the chopped tomatoes, minced garlic, and torn basil leaves.

  • 4)

    Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens.

  • 5)

    Blend the sauce until smooth, and it’s ready to use.
