When i found those fresh round zucchinis at the market, as well as the ripe and juicy tomatoes, onions, garlic and fragrant basil, I knew I had to make petits farcis with a homemade tomato sauce. This is part 1, follow for part 2!
Ingredients
- 4 large ripe tomatoes
- 1/2 large purple onion, finely chopped
- 1 bunch of fresh basil leaves, torn by hand
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil
- 2 large cloves of garlic, minced

Method
- 1)
Make two incisions in the shape of a cross on the bottom of each tomato, place them in a bowl, and cover them with boiling water. Let them stand for 5 minutes, then peel and chop the tomatoes.
- 2)
In a medium pot, heat a generous drizzle of olive oil over medium heat. Add the finely chopped onion, salt, pepper, and oregano. Sauté until the onion softens.
- 3)
Stir in the chopped tomatoes, minced garlic, and torn basil leaves.
- 4)
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens.
- 5)
Blend the sauce until smooth, and it’s ready to use.
