These delicious little dumplings are a Levantine speciality that reminds me so much of home. My mom always makes something “white” on special feasts as white represents purity, a fresh start, a celebrational made them as a collaboration with @marcatopasta using their new ATLAS 150 machine and it made the whole process a lot easier.
These dumplings can be served with warmed yogurt but at home we also love to snack on them as they are, freshly baked from the oven! Recipe below

Ingredients

For the filling

  • Sauté in 1 tbsp of oil
  • 200 grs minced beef
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tspn 7 spices
  • 1 tbsp pine nuts

For the dough

  • Knead together
  • 2 cups of flour
  • Pinch of salt
  • 1/4 cup oil
  • 3/4 to 1 cup of warm water (add gradually), If it gets too sticky, add some flour. When it’s smooth and elastic, cover and refrigerate 30min.

Method

  • 1)

    Place some flour on the dough then start rolling it through the pasta machine, starting with thickness 1 all the way to 3 or 4.

  • 2)

    Dust some flour on the dough to keep it from sticking, and keep rolling it until it’s soft, smooth and elastic- and as thin as you can!

  • 3)

    Use a cookie cutter or an espresso cup to cut discs into the dough.

  • 4)

    The scrapes of dough can be re-rolled.

  • 5)

    Using 2 small spoons, place a bit of the cooled mixture on each disc of dough.

  • 6)

    Fold over each disc and lightly pinch to seal the edges.

  • 7)

    Bring the 2 edges over your finger and seal them by pinching the dough together.

  • 8)

    Bake in a preheated oven at 180C until nice and lightly golden, about 10-15min.

  • 9)

    While they were baking, I gently warmed about 2 cups of regular yogurt in a small pot, while whisking.

  • 10)

    You can also sauté a handful of chopped coriander and 1 crushed garlic clove in olive oil and use it as a garnish.

  • 11)

    Drizzle some chili oil on top!
