Warm veggies and quinoa salad with panko crusted halloumi and zesty tahini dressing. I made this dish after a workout and I was starving! It was so easy to put together, and the roast veggies release so much flavor and juice that add a delicious taste to the quinoa.

Warm veggies and quinoa salad with panko crusted halloumi and zesty tahini dressing. I made this dish after a workout and I was starving! It was so easy to put together, and the roast veggies release so much flavor and juice that add a delicious taste to the quinoa.

Ingredients

For the salad base

  • ½ cup cooked quinoa
  • 1 leek, thinly sliced
  • 1 medium onion, thinly sliced
  • ½ small butternut squash, peeled and cubed
  • A couple of handfuls of baby rocket (arugula)
  • A small handful of pumpkin seeds (optional)
  • A handful of fresh coriander leaves

For the roasted vegetables marinade

  • 2 tbsp honey
  • 2 tbsp chili oil (@shauce_ae )
  • 1 tbsp chili paste (umami crunch @shauce_ae )
  • 1 tbsp olive oil
  • Pinch of salt

For the halloumi

  • 200 g halloumi, cut into cubes
  • 2 tbsp honey
  • 2 tbsp chili oil
  • 1 tbsp olive oil
  • Panko breadcrumbs, for coating

For the tahini dressing

  • Juice of 1 lemon
  • Zest of 1 lemon
  • 3–4 tbsp tahini
  • 1 tbsp honey
  • 1 tbsp chili oil
  • 1 tbsp olive oil Salt, to taste

Method

  • 1)

    In a bowl, mix the honey, chili oil, chili paste, olive oil, and salt. Add the cubed butternut squash, sliced leek, and onion. Toss well to coat.

  • 2)

    Place the marinated vegetables in the air fryer basket and cook at 180°C for 15–18 minutes, shaking halfway through, until golden and caramelized.

  • 3)

    In a small bowl, mix honey, chili oil, and olive oil. Toss the halloumi cubes in this marinade, then coat them in panko breadcrumbs.

  • 4)

    Air fry at 180°C for about 15 minutes, or until golden and crisp.

  • 5)

    In a large bowl, combine the cooked quinoa with the roasted vegetables. Adjust seasoning if needed.

  • 6)

    On a large serving plate, spread the baby rocket. Add the quinoa and roasted veggies mixture on top. Arrange the panko-crusted halloumi cubes over the salad.

  • 7)

    Drizzle with the tahini dressing, sprinkle pumpkin seeds if using, and top with fresh coriander leaves.
