Quick caramel toffee sauce, ready in under 10min and without caramelizing the sugar. Make sure to use SOFT dark (or even light) brown sugar. Delicious over ice cream or apple cake.
Ingredients
- 6 tbsp packed soft brown sugar (use any kind, dark or light- i used a mix of both)
- 1.5 tsp salted butter
- 1/2 tsp vanilla essence
- 1 tbsp maple syrup (optional)
- Pinch of salt (optional)
- 1/3 cup whipping cream

Method

Place all the ingredients in a small, heavy based pot.

Whisk to mix then transfer over a slow-medium fire.

Gently bring to a simmer and cook for about 5min until thickened.

It will thicken more when cooled.

Transfer to a clean glass jar fitted with a lid.
- 6)
Once cooled completely, chill in the fridge.
- 7)
The sauce keeps well for up to a week.
- 8)
You can gently warm it up in a bowl of hot water before drizzling over your desserts.
