Quick beef stroganoff. The perfect meal for big dinners or small cozy nights in. You can easily double or triple it, prepare it in advance and just add the rest of the cream and heating it up just before serving. As this dish is quote simple, use the best ingredients possible and only filet or tenderloin beef for the most delicious results.

Ingredients
- 600 g beef filet, cut into strips
- 1 large red onion, thinly sliced
- 2 garlic cloves, crushed
- 500 g brown mushrooms, quartered
- 400 g sour cream (crème fraîche)
- fresh thyme sprigs
- 1-2 tbsp soy sauce
- salt flakes freshly cracked
- freshly cracked black pepper
- 1-2 tsp truffle paste (optional)
- 2 tbsp butter
- olive oil

I like to use a large pot to cook then serve the stroganoff.

Start by melting the butter with some olive oil. Sauté the onions until translucentthen add the garlic and fresh thyme leaves. Saute for a couple of minutes then add the mushrooms.

On medium-high heat, cook the mushrooms until they release most of their liquids and darken.

Add the truffle paste, if using, and the soy sauce. Mix well then remove everything from the pot and keep aside.

In the same pot, place the strips of beef, season with salt, pepper and some more thyme sprigs. Don’t overcrowd the pot, cook in batches if needed.

Brown the meat until just cooked then add the mushrooms back into the pot and mix everything together

Add only half the sour cream if you are preparing this dish in advance or add all of it if you are serving it immediately and gently bring to a simmer.

Season with salt and pepper if needed.

Serve with rice or even tagliatelle.
