If you have last minute guests showing up and you have dessert, make this juicy, crunchy and easy summer fruit crumble using any stone fruit you have at hand! It’s also super convenient as it can be made gluten free too!
Quick and Easy Gluten-Free Summer Crumble
Ingredients
- 3 tbsp almond flour
- 3 tbsp coconut sugar (or brown sugar)
- 3 tbsp rolled oats
- 3 tbsp oat flour (or plain flour)
- 1 tsp cinnamon
- 40 g cold butter
- 3 peaches or nectarines
- A handful of blueberries (optional)
- Slivered almonds or chopped peanuts (for topping)

Method
- 1)
Preheat the air fryer to 170°C or the oven to 180°C.

The crumble can be made ahead of time.

In a bowl, combine the almond flour, coconut sugar, rolled oats, oat flour, and cinnamon.

Grate the cold butter into the bowl with the dry ingredients.
- 5)
Mix together until the mixture resembles coarse crumbs. If the mixture doesn’t clump together, add a tablespoon of coconut oil.

Chop the peaches or nectarines into small pieces. They can also be halved.
- 7)
Optionally, add a handful of blueberries.
- 8)
To assemble, divide the chopped fruit among six ovenproof ramekins or place all the fruit in a single ovenproof dish.

Sprinkle the crumble mixture evenly over the fruit and top with slivered almonds or chopped peanuts.
- 10)
Bake for 25 minutes, uncovered, until the topping is golden brown and the fruit is bubbling.

Serve warm with vanilla ice cream, vanilla yogurt, or whipped cream
