As requested, here is the recipe for the most delicious Oreo cheesecake brownies! It is very easy to make and my kids absolutely loved helping me. Once cooled, keep the bars in the fridge as they are so yummy chilled. ​

As requested, here is the recipe for the most delicious Oreo cheesecake brownies! It is very easy to make and my kids absolutely loved helping me. Once cooled, keep the bars in the fridge as they are so yummy chilled. ​

INGREDIENTS

Brownies:

  • 110grs unsalted butter, melted
  • 1 cup caster sugar
  • 1 cup unsweetened cocoa powder, sifted
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • ½ cup plain flour

Oreo Cheesecake:

  • 12 whole oreos, crushed
  • 560grs cream cheese, at room temp
  • ½ cup caster sugar
  • 2 large eggs
  • 1 tbsp plain flour, sifted
  • ¼ tsp salt

METHOD

For the brownies:

    Preheat oven to 160°C

    Line an 9”x9” baking pan with parchment paper, leaving a bit overhanging for easy removal. Set aside.

    In a large bowl, combine butter, sugar, cocoa powder, and salt (dough will be thick). Mix in the vanilla, then the eggs, one at a time. Whisk until very well mixed. Sift in the flour and mix until just combined. Spread into the prepared pan. You can add some whole Oreos on top before baking (optional but sooo good!)

    Bake brownies layer for 15 minutes, or until just set. Let it cool for about 10 minutes and then keep it in the fridge while you make the cheesecake layer.

For the cheesecake:

  • 1)

    Crush your oreos, but make sure they aren’t powdered. Set aside.

    In a large bowl, use an electric mixer to beat the cream cheese and the sugar together until smooth. Beat in the eggs until smooth, then add in the flour and salt and mix until just combined. Fold in the crushed oreos. Pour this batter over the cooled brownies.

  • 3)

    Bake at 160°C for about 50 minutes, or until the cheesecake is no longer jiggly in the center.
    Bring to room temperature before chilling in the fridge for at least 2 hours.
