Najla’s Date Custard. A sweet lady called Najla sent me the most delicious dates from their farm. I don’t know Najla, and Najla doesn’t know me, but I can guarantee you that she is a sweet soul. This custard is only sweetened with dates, and it is absolutely delicious.
Ingredients
- 1 cup of soft pitted dates
- 500 mL of low-fat milk
- 200 mL of cream
- 3 egg yolks
- 3 tbsp of cornstarch
- 1 tsp of cardamom powder
- Chopped pistachios and dried rose petals for garnish
Method
- 1)
Heat the milk and cream in a small heavy-based pot until it’s just about to boil.
- 2)
Place the pitted dates in a small blender container. Add 1/4 cup of the hot milk mixture and blend until it forms a smooth paste.
- 3)
Transfer 1/4 cup of the date paste to a medium bowl. Reserve the reminder in a small container in the fridge and enjoy as a spread. Add the egg yolks, cornstarch, and cardamom powder. Whisk until the mixture is smooth.

Gradually add about 1/2 cup of the hot milk mixture to the date-egg mixture, whisking constantly to temper the eggs.

Pour the tempered egg mixture back into the pot with the remaining hot milk mixture. Whisk constantly over low to medium heat until the mixture thickens and coats the back of a spoon.

Remove the custard from the heat and pour it into small serving bowls.
- 7)
Chill the custard in the refrigerator until it’s cold and set, at least 2 hours.
- 8)
Before serving, garnish with chopped pistachios and dried rose petals.
