Muhammara X Pure Harvest. Enjoy with some arabic bread or as a dip.
Ingredients
- 4 Pure Harvest Red Peppers
- 3 medium Pure Harvest tomatoes + bunch of cherry-on-the-vine tomatoes
- 2 garlic cloves, crushed
- 1/2 cup of panko, slightly toasted in olive oil
- 2 cups walnuts
- 5 tbsp extra virgin olive oil
- 3 tbsp pomegranate molasses
- 1 tbsp sumac
- 1/4 cup pine nuts (optional)
- 1/4 cup smoked almonds (optional)
- 1 tsp Aleppo pepper
- 1 tsp red pepper powder or pepper paste (optional)
- 1 tsp paprika
- 1 tsp oriental spices (optional)
- 1 tsp salt
- Extra olive oil

Method
- 1)
Preheat oven to 230C
- 2)
Place the veggies on baking trays lined with baking paper.
- 3)
Drizzle olive oil on them and broil for about 30 min ir until tender and charred.
- 4)
Meanwhile, in your food processor, place the rest of the ingredients.
- 5)
Pulse until finely chopped and the consistency is clumpy.
Transfer to a bowl. - 6)
When the veggies are ready, allow to cool a bit then peel and deseed.
- 7)
Place in the same food processor and blend until smooth.
(Reserve one cup of the veggies to use as a base for a soup or a paste sauce). - 8)
Combine the veggies with the nutty spices.
- 9)
Mix well and season with extra lemon juice, salt and olive oil.
- 10)
Enjoy with some arabic bread or as a dip.
