Gazpacho Soup

Summer is here and a good chilled gazpacho soup is a meal I crave during those hot sticky days! You can adapt the recipe to whatever herbs and veggies you have at home, but start with good, ripe tomatoes, small sweet cucumbers and mild capsicum peppers. All you need is a strong blender such as the OptiMUM Kitchen Machine from @boschhomegulf. I love the glass heat proof blender as I add boiling water to my vegetables and that avoids me peeling them! For the garnish, I also used the slicer of the machine, super easy to attach thanks to a smart color coding, and I got some crunchy cucumber croutons that I added along with chili paste on top of my chilled, flavorful gazpacho soup! Ingredients

  • 2 medium-large ripe tomatoes, quartered
  • 2 small Lebanese cucumbers, roughly sliced
  • 1 large or 2 small capsicum (ideally orange or red), cored
  • 1 medium red onion, quartered and peeled
  • 2 small garlic cloves, peeled
  • 1 tsp sea salt
  • 1/2 tsp black pepper, freshly cracked
  • 1/2  tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp dried coriander
  • 1/4 tsp dried oregano
  • Pinch of chili flake (or a small chili, reseeded)
  • 1/2 cup boiling water
  • 2-3 tbsp olive oil (optional)

Method

  • 1)

    To decorate: homemade croutons, chopped fresh herbs, a drizzle of olive or chili oil, or any leftover chopped gazpacho ingredients such as grated cucumbers.

  • 2)

    Place all the veggies into the glass, heat proof blender, add the spices and the hot water.

  • 3)

    That helps the skin of veggies to soften a bit as I don’t peel them).

  • 4)

    Blend until smooth.

  • 5)

    Check the seasoning and chill.

  • 6)

    When ready to serve, top with the garnish of your choice to add crunch and texture as well as a kick of chili if you like!
