The most delicious, fluffy and thick homemade pancakes! Recipe below as you have all requested. I thought I would share it before the weekend is over. Thick American style pancakes
INGREDIENTS
- 2 medium eggs, lightly beaten
- 50grs salted butter
- 350ml milk
- 300grs all purpose flour
- 50grs caster sugar
- 4tsp baking powder
- 1tsp vanilla essence

METHOD
- 1)
Warm the milk and add to it the butter cut up into small pieces.
- 2)
Whisk until melted then set aside.
- 3)
Mix the flour, sugar and baking powder in a large bowl.
- 4)
Add the milk mixture and whisk briefly.
- 5)
Add the lightly beaten eggs and the vanilla.
- 6)
Whisk well until just combined (don’t over mix otherwise you will get rubbery pancakes)
- 7)
Leave to rest covered for 30min at room temp or in the fridge overnight (a friend said they came out too thick when left to rest overnight in the fridge)
- 8)
Lightly butter a frying pan, and pour 1/4 of a cup of batter rounds. Flip when one side is covered with tiny bubbles.
Repeat.
