24cm/ 9.5inch springform tin
INGREDIENTS
- 125 grs unsalted butter, + extra for tin
- 300 grs dark chocolate
- 1.5 tbsp cocoa powder
- 6 eggs separated
- 100 grs caster sugar , + extra for dusting
- 1 pinc salt
- 150 grs sour cream
- 1/2 tsp vanilla essence

METHOD
- 1)
Preheat the oven to 150C
- 2)
Butter the tin generously and dust it with caster sugar.
- 3)
Cover the outside bottom of the tin with aluminum foil, as we will be placing it in a water bath.
- 4)
Melt the chocolate, butter and cocoa over a Bain Marie or gently in the microwave. Keep aside to cool.
- 5)
Separate the eggs, making sure not to get any traces of yolk in the egg whites.
- 6)
Whisk the egg whites, half the sugar and a pinch of salt until you reach stiff peaks.
- 7)
Beat the egg yolks with the remaining sugar, the sour cream and vanilla until smooth. Mix in the chocolate mixture.
- 8)
Fold the egg whites into the chocolate mix, starting with 1/3 of the egg whites to lighten the mixture then adding the rest in 2 times making sure to use a big metal spoon or a rubber spatula and taking care not to deflate the egg whites.
- 9)
Pour into the tin, smooth the top with an offset spatula, place in a big tin filled with boiling water and bake for about 55min or until a skewer inserted in the middles comes out clean.
- 10)
Once baked, remove from the oven while still in the water bath. Wait for a couple of minutes before removing from the water bath and chilling.
Notes
Serve with ice cream for whipped cream.
