These crispy feta and sujok phyllo rolls, a surprising lighter change from the usual cheese ones, are made using @emborgarabia frozen vegetables and are bursting with flavor and goodness. Packed at their peak freshness, frozen veggies keep all their nutrients and vitamins, offering convenience without compromise.
Ingredients
- 2 cups frozen vegetables from Emborg
- 100g crumbled feta cheese
- 1-2 tbsp chopped chives
- extra virgin olive oil
- salt and pepper to taste
- 1/4 cup chopped spicy veal chorizo or sujok
- 12 sheets of phyllo pastry (strips)
- sesame seeds for sprinkling
For gluing
- 2 tbsp flour
- 2 tbsp water
Method
- 1)
In a medium frying pan, heat a bit of olive oil over medium heat. Add the frozen vegetables directly from frozen into the pan.
- 2)
Add the chives and the sujok. Cover the pan and cook the vegetables until they are tender, stirring occasionally.
- 3)
Once the vegetables are cooked, remove the pan from the heat. Add the crumbled feta to the pan and mix everything together until well combined. Season with salt and pepper to taste. Mix well.Preheat your air fryer to 180°C

Lay out one sheet of phyllo pastry and place a 1-2 tsp of the mixture along one edge of the sheet.

Fold the two edges of the phyllo pastry over the filling. Roll up the phyllo pastry, enclosing the filling, to form a tight roll.

Mix the flour and water to make a paste, then use it to seal the end of the roll.!
- 7)
Repeat the process with the remaining phyllo sheets and filling mixture, making 12 rolls in total.
- 8)
Brush each roll lightly with olive oil. Sprinkle sesame seeds and bake for about 10-12 minutes, or until they are crispy and golden brown.

Serve the phyllo rolls warm as a delicious appetizer for iftar or snack for suhoor. Enjoy
