Easy Fresh Zaatar and Tomato Quiche

Easy fresh zaatar and tomato quiche.

This recipe is based on my friend Aline’s famous fresh zaatar quiche. Her parties are the most fabulous and this quiche is always a crowd pleaser at dinner time. Use this recipe as a base and use your imagination for delicious combinations using whatever cheese, veggies or even cold cuts that you have at hand! The possibilities are endless.

This recipe is based on my friend Aline’s famous fresh zaatar quiche. Her parties are the most fabulous and this quiche is always a crowd pleaser at dinner time. Use this recipe as a base and use your imagination for delicious combinations using whatever cheese, veggies or even cold cuts that you have at hand! The possibilities are endless.

Ingredients

  • 1 pack ready rolled puff pastry (fresh type, pure butter)
  • 4 eggs
  • 200 ml whipping cream
  • 100-150 grs mature cheddar, grated
  • 250 grs fêta (organic dodoni feta is my favorite)
  • 1-2 handfuls of green thyme (wild zaatar)
  • 1 generous pinch of dried lebanese zaatar mix
  • 1 small punnet of organic, ripe, cherry tomatoes- sliced in half (Or 4 medium tomatoes, sliced)
  • Freshly ground black pepper

Method

  • 1)

    Preheat the oven at 180C

  • 2)

    Beat the eggs until they become fluffy. Add the cream. Crumble the feta with a fork and add it to the mix. Add the zaatar and cheddar. Season with salt and pepper.

  • 3)

    Mix everything.

  • 4)

    Dust some flour on your work surface and gently roll the ready made dough to have it overhang your pie plate (about 9 or 10 “).

  • 5)

    Line a pie plate with the dough, let the extra pieces over hang the plate.

  • 6)

    Place the mixture on the dough, top it with the cut tomatoes cut side up and sprinkles with the dried zaatar.

  • 7)

    Fold any excess dough onto the top of the egg mixture.

  • 8)

    Brush any leftover egg and cream (egg wash) on the puff pastry- it will be shiny once baked.

  • 9)

    Sprinkle with flax seeds and black sesame seeds of desired.

  • 10)

    Bake it in the oven for 30-40 minutes or until the top becomes golden/ brown.
