Use your over ripe bananas in this fragrant, super moist and easy banana bread. You can add nuts, chocolate chips or dried
INGREDIENTS
- 175grs plain flour
- 2 tspn baking powder
- 1/2 tspn baking soda
- 1/2 tspn salt
- 125grs melted unsalted butter
- 150grs sugar
- 2 large eggs (or 3 medium)
- 4 small (or 3 medium) very ripe bananas
- 1 tspn vanilla extract

METHOD
- 1)
Mix the dry ingredients and set aside.
- 2)
Beat the butter and sugar, then add the egg one by one and mix well after each addition.
- 3)
Add the vanilla.
- 4)
Fold in the flour mix in 3 additions.
- 5)
Optional: fold in at the end about 100grs soaked sultanas or 50grs chopped walnuts or 100grs chocolate chips
- 6)
Bake for 1 hour or until an inserted skewer comes out clean.
Notes
Place on a rack to cool.
