Date Muffins with Chocolate Chips

Recent studies have shown that being a multi-tasker doesn’t always produce the best results. This recipe is made using the date paste that my friend Najla sent me. It is so easy. It is ok to use shortcuts or help when needed! Simple and easy is something the best way forward.
Ingredients
- 1 cup unsweetened date paste
- 2/3 cup milk of choice
- 1¾ cups wholewheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 large egg (or 1 flax egg for vegan option)
- ½ cup coconut oil
- 1 tsp vanilla extract
- ½ cup chopped chocolate

Method

Preheat oven to 180C

Place egg, date paste, milk, vanilla, coconut oil in a small bowl and blend using a hand held blender.

In a large bowl, whisk together the flour, baking powder, baking soda and cinnamon.
- 4)
Combine both until just mixed. Add the chopped chocolate and mix just until no streaks of flour appear.
- 5)
Transfer to a 12 hole muffin tin lined with muffin cases. I added extra chocolate on top!

Bake for 18min or until puffed, golden and an inserted skewer comes out clean. Cool on a rack and enjoy.
