Super crunchy, easy and very delicious! Serve them with honey and sesame seeds for a sweet bite or with zaatar and nigella seeds for a savory one.

Super crunchy, easy and very delicious! Serve them with honey and sesame seeds for a sweet bite or with zaatar and nigella seeds for a savory one.

Ingredients

  • 1 block of halloumi (about 200g), cut into small cubes
  • Half a pack of phyllo pastry
  • 2 tbsp of olive oil
  • 40g of melted butter
  • Honey (for drizzling, optional)
  • Fresh zaatar (for garnish, optional)
  • Sesame seeds (for garnish, optional)
  • Nigella seeds (for garnish, optional)

Method

  • 1)

    Begin by rinsing the halloumi cubes and pat them dry with paper towels.

  • 2)

    Lay out the phyllo pastry sheets and keep them covered with a damp towel to prevent them from drying out while you work. Cut them lengthwise to get wide strips.

  • 3)

    Take 1 strip of pastry, brush it with the mix of olive oil and butter. Top with another sheet of pastry and brush it as well with the oil butter mixture. This will help the pastry become crispy and golden.

  • 4)

    Take one piece of phyllo pastry and place a halloumi cube at the top.

  • 5)

    Fold the top of the pastry sheet over the halloumi cube, then fold the sides in, and continue to fold it up, creating a parcel. Make sure the halloumi cube is completely enclosed.

  • 6)

    Repeat this process for all the halloumi cubes.

  • 7)

    Preheat your oven to 180°C

  • 8)

    Place the halloumi parcels on a baking sheet, making sure they are not too crowded.

  • 9)

    Bake the halloumi bites in the preheated oven for about 20-30 minutes, or until they are golden and crispy. Alternatively, you can use an air fryer to achieve the same result.

  • 10)

    Once they are done, you can choose to drizzle honey and sesame seeds for a sweet version or garnish with fresh zaatar and nigella seeds for a savory twist.

  • 11)

    Ideally serve your crunchy halloumi bites hot.
