Who knew coffee could take steak this far?  @petites_choses’s Coffee-Rubbed Steak blends rich coffee with warm spices to create an aromatic, unbeatable crispy crust while keeping the inside tender and juicy — unexpected, yet unbelievably delicious.

Ingredients

  • 2 tenderloin steaks (about 250g each)
  • 3 tbsp finely ground coffee
  • 1⁄2 tsp garlic powder
  • 1⁄4 tsp paprika powder
  • 1 tsp salt flakes
  • 1 tsp black pepper
  • 1.5 tbsp dark brown sugar
  • 100g butter (or as needed)
  • Olive oil
  • 2 rosemary sprigs

Method

  • 1)

    Pat the steaks dry with a paper towel and let them come to room temperature.

  • 2)

    Mix the ground coffee, garlic powder, paprika, salt, pepper, and brown sugar together in a small bowl.

  • 3)

    Massage the coffee dry rub onto both sides of the steaks. Let rest at room temperature for 20 to 30 minutes, or keep in the fridge for up to 8 hours.

  • 4)

    In a heavy cast iron skillet, heat some olive oil and a small cube of butter over medium-high heat with 2 sprigs of rosemary.

  • 5)

    Add the steaks and cook for 3-5 minutes on each side (3 for rare, 5 for medium).

  • 6)

    Remove the steaks from the heat and cover with foil for 10 minutes before serving.

  • 7)

    You can use the leftover butter and oil in the skillet with the rub to create a gravy using some flour, stock (or water), and a splash of soy sauce.

  • 8)

    Serve with mashed potatoes and grilled greens.
