Chocolate Oat Crunchies

An easy recipe during these difficult times.
Ingredients
- 320g oats
- 180g butter
- 150g golden caster sugar
- 50g light brown sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1 tbsp honey
- 1 tbsp almond flour
- 1 tbsp desiccated coconut (optional)
- A handful of almond flakes (optional)
to dip
- 100g chocolate, mi used 50/50 milk and dark)
- Flaky sea salt

Method

Preheat oven to 175C.
- 2)
Line a 9×9” tin with baking paper
- 3)
Melt the butter (you can also brown it).
- 4)
In a large bowl, mix the sugars. Add the butter, honey, vanilla and salt. Mix well with a wooden spoon.

Add in the dry ingredients, mix really really well to combine. You can use a rubber spatula or a gloved hand.
- 6)
Transfer to the baking tin, flatten using the back of a glass cup (or again your hand).
- 7)
Bake for 18-20min or until golden.
- 8)
Loosen the edges then cool completely before cutting into small squares or rectangles.

Dip in the melted chocolate and sprinkle with sea salt if desired.

Keep in the fridge in an airtight container.
