Chocolate chip muffins with yogurt, a super light, tender and soft muffin. The beauty of this recipe is that it is super easy to make and you can vary it with whatever ingredients you have at hand. Make sure not to over mix!
Ingredients
For 10 muffins. Line a muffins pan with muffin cases
- ½ cup yoghurt
- 1 cup sugar
- 2 large eggs
- ¼ cup oil (I used coconut)
- 2 cups flour
- 1 tsp baking powder
- 100g milk chocolate chips
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Sliced almonds to decorate (optional)
Method
- 1)
Preheat oven to 180°C.
- 2)
In a large bowl, whisk the sugar and yogurt.
- 3)
Add the egg one by one, mixing well between each addition.
- 4)
Add the oil, the spices and whisk until smooth.
- 5)
In another small bowl, whisk the flour with the baking powder and the chocolate chips.
- 6)
Add to the wet mixture and fold using a spatula.
- 7)
Transfer to the lined muffin tins and bake for 15-17min until puffed and lightly golden.
- 8)
Cool and keep in an airtight container.
