The easiest, basic muffin recipe that you can adapt to your preferred choice of ingredients. I made it with chocolate chips, whole wheat flour and coconut oil. How will you make yours?
Ingredients
- 2 cups flour (I used whole wheat)
- 2 .5 tsp baking powder
- 1.5 cups yoghurt (I used fat free, high protein Greek)
- 1/2 cup oil (I used coconut)
- 2 eggs
- 3/4 cup sugar (you can add or remove)
- 1 cup add ons (I used chopped dark chocolate, you can use berries, dried fruits, nuts or anything you like)
Method

Preheat oven to 180°C.

Prepare 18 hole small (not mini) muffin tray.
- 3)
Whisk wet ingredients until smooth.
- 4)
Whisk dry ingredients except the chocolate.
- 5)
Combine both with a rubber spatula.
- 6)
Use 1/3 cup to measure the equal amount for all the muffins.
- 7)
Bake for 18-20min until lightly golden and a skewer inserted comes out clean.
- 8)
Cool on a rack for a few minutes then remove from the pan and cool completely on the rack before keeping in an airtight container.

Can be wrapped in cling wrap airtight and frozen.
