Artichoke, Fava Bean & Potato Salad with Pesto Labneh

Pesto labneh with fava beans, artichoke and baby potatoes? Yes please!!! You might wonder if this is a dip or a salad?
Well it is the best of both worlds: a chunky, crispy, earthy salad with a creamy best labneh base.
I sprinkled some chopped pistachios and bresaola confetti- use herbs if you have any fresh at hand such as basil or mint!

You can eat it with a fork, with a spoon or using crusty bread.
It is absolutely delicious!

Pesto labneh with fava beans, artichoke and baby potatoes? Yes please!!! You might wonder if this is a dip or a salad?
Well it is the best of both worlds: a chunky, crispy, earthy salad with a creamy best labneh base.
I sprinkled some chopped pistachios and bresaola confetti- use herbs if you have any fresh at hand such as basil or mint!

Ingredients

For the salad

  • 5 artichoke hearts, steamed and cut into pieces
  • 1 cup peeled fava beans, steamed
  • 250 g baby potatoes, boiled and quartered
  • ½ medium red onion, thinly sliced
  • 6–8 cherry tomatoes, halved
  • Extra virgin olive oil
  • Salt, to taste

For the dressing

  • 3 tbsp labneh or Greek yogurt
  • 3 tsp good-quality pesto
  • 1 tsp zaatar
  • Salt, to taste
  • Chili flakes, optional

For serving

  • Crushed pistachios
  • zaatar
  • chopped bresaola, like confetti!
  • Extra virgin olive oil and fresh herbs
  • Fresh crusty bread

Method

  • 1)

    Prepare the dressing by whisking together the labneh or Greek yogurt, pesto, zaatar and salt until smooth. Add the chili flakes if using.

  • 2)

    In a large bowl, combine the artichokes, fava beans, potatoes, red onion and cherry tomatoes. Drizzle with a little olive oil, season with salt and toss gently to combine.

  • 3)

    Spread the pesto labneh onto a serving platter. Pile the salad generously over the top.

  • 4)

    Finish with the crushed pistachios, zaatar, chopped bresaola and a drizzle of extra virgin olive oil.

  • 5)

    Serve immediately with fresh crusty bread.
