Sicilian almond cookies, with a cherry on top!
These cookies are perfect as they use minimal ingredients, you can flavor them however you want and are super easy to make.
I first learnt this recipe while on a culinary trip last October to Sicily with @justine_snacks and @eminchilli. We visited a beautiful farm called @busulmonaa that specializes in Sicilian almonds.

These cookie stay chewy and crispy up to a week if you keep them in an airtight container.

These cookies are perfect as they use minimal ingredients, you can flavor them however you want and are super easy to make. These cookie stay chewy and crispy up to a week if you keep them in an airtight container.

Ingredients

  • 2 cups almond flour
  • 1 cup sugar
  • Pinch salt
  • 2 large egg whites room temperature
  • Zest of 1 lemon
  • 1/4 cup icing sugar, for rolling
  • 1 tsp vanilla
  • Cherries or almonds to decorate

Method

  • 1)

    Preheat oven to 175°C.

  • 2)

    Massage the lemon zest into the sugar.

  • 3)

    Add the almond flour and the salt, mix to combine.

  • 4)

    Add the egg white and the vanilla. Mix well and knead into a dough.

  • 5)

    Make small balls and roll into the icing sugar.

  • 6)

    Transfer to a lined baking sheet and top with a halved cherry or an almond, pressing lightly.

  • 7)

    Bake for 15-17min until lightly golden underneath.

  • 8)

    Carefully transfer to a rack to cool completely.

  • 9)

    When cold, keep in an airtight container.
