Ya habibi whole orange mixer cake. This cake is the easiest as we place all the ingredients (including the WHOLE orange) into the food processor. The scent of orange reminds me of winters in Beirut.
Ingredients
- 1 whole orange, unwaxed, scrubbed and dried- cubed and deseeded
- 250g caster sugar
- 250g coconut oil (or vegetable oil)
- 250g plain flour (remove 1 tbsp, replace with corn starch)
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 4 large eggs
- 1 tsp vanilla extract
Method

Preheat your oven to 175°C.

Line an 8-inch square or round baking pan with parchment paper.

In a food processor, combine the cubed orange, sugar, coconut oil, plain flour with corn starch, baking powder, baking soda, eggs, and vanilla extract.

Pulse and blend the ingredients for 3-4 minutes or until the mixture is smooth.

Transfer the batter into the prepared baking pan, spreading it evenly.

Bake in the preheated oven for 40-45 minutes or until an inserted skewer comes out clean. The cake should also be golden and bouncy to the touch.

Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Once cooled, slice and serve. Keep
In an airtight container.
