Amidst the craziness of last week, I managed to get a bite of these delicious dates filled with cardamom marzipan @beitkanz. I had to recreate the recipe, with a twist.
Dates with cardamom and coffee marzipan

Ingredients
- 15 large Medjool dates (300g)
- 125g marzipan
- 5-6 cardamom pods, seeds crushed
- 1 vanilla bean, scraped (or 1/2 tsp vanilla extract)
- 1 tsp arabic coffee, finely ground
- Optional: 1-2 tablespoons crushed pistachios for garnish
Method
- 1)
Gently open the dates using a sharp knife and remove the pits.
- 2)
In a small bowl, combine the marzipan, freshly ground cardamom seeds, the coffee and the vanilla. Mix well until the spices are evenly distributed throughout the marzipan.
- 3)
Take a small portion of the marzipan mixture, about the size of a hazelnut, and shape it into a small cylinder that will fit inside the dates. Repeat this process for all the dates.
- 4)
Gently insert one marzipan cylinder into each date, closing the date around the filling.
- 5)
Optional: If desired, roll the stuffed dates in crushed pistachios for added texture and flavor.
- 6)
Place the stuffed dates in an airtight container and keep refrigerated.
- 7)
Serve with a cup of coffee.
