INGREDIENTS
- 200grs butter, unsalted
- 200grs dark chocolate, (60-70%)
- 1 cup caster sugar, (can be about 3/4)
- 4 large eggs , or 5 medium
- 1/2 tspn vanilla, extract
- 1/2 tspn salt
- 1/2 tspn instant coffee
- 1/4 cup plain flour, sifted
METHOD
- 1)
Preheat oven to 180C
- 2)
Butter and flour an 8” springform tin
- 3)
Melt the butter and chocolate in a bain Marie.
Put aside to cool. - 4)
Mix in the sugar, the vanilla, the eggs and whisk well to combine.
- 5)
In a small bowl, measure the flour, the salt and the coffee. Whisk to combine.
- 6)
Add to the chocolate mixture and fold on until just combined but properly mixed.
- 7)
Bake for 30 to 40min in the preheated oven until the cake is puffed up, cracked on the top and no longer jiggling when you shake the tin. The center will still be wet but it will keep on cooking while cooling.
- 8)
Place on a cooling rack and wait until completely cool before unmolding.
Notes
Serve at room temperature with vanilla ice cream.
