Chicken stroganoff, the simplest and most delicious way to make this dish. Hope you enjoy it as much as we do!
INGREDIENTS
- 2 medium onions, chopped
- 2-3 garlic cloves, sliced
- 6-8 sprigs of fresh thyme
- 250g crème fraîche, (sour cream)
- 2 punnets of mushrooms, sliced
- 1-2 tsp soya sauce
- 1-2 tsp thick balsamic vinegar, (optional)
- 5-6 chicken breast, sliced diagonally into strips
- Olive oil
- Salt and pepper
METHOD
- 1)
Heat 1-2 tbsp of oil in a large pot.
- 2)
Add the chopped onions and sauté until translucent.
- 3)
Add the sliced garlic and the thyme.
- 4)
Sauté together until fragrant, season with salt and pepper and then add the sliced mushrooms.
- 5)
Mix and cook on medium with the lid closed for 5min so the mushrooms release their juices.
- 6)
Next uncover and add the soy sauce and balsamic vinegar and simmer together for another 2-3 minutes.

Remove the mushrooms mix from the pot and keep aside.
- 8)
Tip the sliced chicken strips into the pot, season with pepper and extra thyme, and cover for 5min on medium heat then uncover and simmer until 100% cooked.
- 9)
Add the mushrooms back into the pot, then the sour cream and mix well to combine.
- 10)
Simmer for a few minutes, check the seasoning then serve with white rice or pasta.
