With the weather slowly cooling down and the garden filling up with (socially controlled) giggles, these chestnut mousse cups seem like the perfect individually-served dessert that remind us of winter celebrations. It is super easy to whip up, using only 3 simple ingredients. You can decorate it with crushed pieces of ready made meringues and grated chocolate shards.

Chestnut Mousse

With the weather slowly cooling down and the garden filling up with (socially controlled) giggles, these chestnut mousse cups seem like the perfect individually-served dessert that remind us of winter celebrations. It is super easy to whip up, using only 3 simple ingredients. You can decorate it with crushed pieces of ready made meringues and grated chocolate shards

Ingredients

  • 300 ml double or whipping cream
  • 4-5 tablespoons of chestnut jam (bonne maman)
  • 1/4 tsp Vanilla extract

Method

  • 1)

    A big glass or metal bowl (chilled in the fridge)

  • 2)

    Whisk(s) (also chilled in the fridge)

  • 3)

    Place the cream in either a glass bowl or the chilled bowl of the stand mixer.

  • 4)

    Start whipping on slow to medium for 2-3 minutes then gradually increase when you feel it has thickened slightly (so you don’t end up with cream all over your kitchen counter tops!)

  • 5)

    Keep whipping on medium high speed for about 8-10min keeping an eye not to over mix or you’ll end up with butter!

  • 6)

    The final consistency should be like thick Greek yogurt or labneh.

  • 7)

    Once it’s thick and fluffy, gently fold in the chestnut jam using a spatula and big light movements in order not to deflate the mousse.

  • 8)

    Use 2 small spoons to divide between the small cups. Sprinkle some good quality grated dark chocolate such as @whittakersnz on top.

  • 9)

    I like to serve them with a lotus biscuit and a piped meringue.

  • 10)

    You can use ready made small ones or even crunch up some bigger ones and sprinkles them on top of the chestnut mousse.

  • 11)

    Keep refrigerated until ready to serve.

  • 12)

    Once decorated, use within a few hours. If undecorated, they would stay for 2 days, placed in an airtight container
