This fresh, cooling, crunchy Persian cucumber salad with avocado is super easy to make and is loaded with herbs, nuts and a tangy dressing- it holds so much flavor!

Ingredients
- 6 small cucumbers, thinly sliced
- 2 ripe avocados, cubed
- 1 small shallot, finely chopped
- A handful of mint leaves, chopped
- A small handful of parsley leaves, finely chopped
- 1/4 cup of toasted walnuts (I added pistachios too), cooled and chopped
- Zest and juice of 1 lemon
- 1 tsp sumac
- Olive oil to taste
- Salt to taste
- 50g feta or Bulgarian cheese, crumbled
Method
- 1)
Place the cucumbers in a large mixing bowl.
- 2)
Add the cubed avocados and immediately add the lemon juice to avoid browning.
- 3)
Add the herbs, the nuts, the onion and the oil. Mix well.
- 4)
Add the crumbled cheese. Taste and season with a bit of salt if needed.
- 5)
Serve immediately.
