Easy Eid maamoul cake. If you’re like me, craving the smell and the flavor of homemade maamoul- make this cake instead. It’s sweet, buttery and nutty. Smells and tastes similarly to the flavors we love about maamoul. It’s made with almond flour so it’s naturally gluten free. You can serve it as squares or as slices. May this Eid bring blessings to you and your loved ones.

Maamoul Cake

Easy Eid maamoul cake. If you’re like me, craving the smell and the flavor of homemade maamoul- make this cake instead. It’s sweet, buttery and nutty. Smells and tastes similarly to the flavors we love about maamoul. It’s made with almond flour so it’s naturally gluten free

Ingredients

  • 2 cups almond flour
  • ¾ cup sugar
  • 3 eggs
  • 100 g butter, melted
  • 2 tbsp orange blossom
  • Zest of 1 orange or clementine (optional)
  • ½ cup pistachios, roughly chopped
  • 1/2 tsp vanilla extract
  • Pinch of salt

Syrup

  • ¼ cup water
  • ¼ cup sugar
  • 2 tsp orange blossom
  • 1 small orange or clementine, juiced and sieved
  • Extra pistachios, chopped, coconut flakes, dried roses - optional for decorating

Method

  • 1)

    Preheat oven to 180°C. Butter a 20–22 cm pan.

  • 2)

    Add zest to sugar and gently rub to release the flavors.

  • 3)

    Whisk eggs and sugar until pale.

  • 4)

    Add melted butter, orange blossom water, vanilla and salt.

  • 5)

    Stir in the almond flour until smooth.

  • 6)

    Pour into the pan and scatter pistachios or coconut flakes on top.

  • 7)

    Bake 30 minutes or until golden.

  • 8)

    If using syrup, simmer the water and sugar for 2–3 minutes, remove from heat, add orange blossom water and juice, then brush lightly over the warm cake (or pour it!).

  • 9)

    Sprinkle with extra pistachios and dried rose petals.
