This delicious treat is full of goodness and is super easy to prepare. Gluten free, refined sugar free and absolutely perfect.

Ingredients

  • 1 cup frozen mixed berries
  • 1 tbsp water
  • 1 cup prepared chia pudding (made the night before with 1 cup milk + 3 tbsp chia + pinch cinnamon + 1 tbsp maple syrup)
  • 1/4 cup Greek yogurt
  • 1–2 tsp unsweetened cocoa powder
  • 1 tbsp maple syrup (optional, to taste)
  • 1/4 cup dark chocolate chips, melted and slightly cooled

Method

  • 1)

    Makes 3 small ramekins.

  • 2)

    To make the coulis, cook the berries with the water for 3–5 minutes until soft and saucy. Mash lightly with a fork and let cool.

  • 3)

    To make the chocolate chia layer, whisk the Greek yogurt with sifted cocoa powder and maple syrup (if using) until smooth and chocolatey then add the prepared chia pudding and mix until well blended.

  • 4)

    To assemble, divide the chocolate chia mixture between the 3 ramekins. Spoon the cooled berries on top.

  • 5)

    Pour the melted chocolate over the berries in a thin even layer. Chill 10–15 minutes until set.
    Can be prepared a day in advance.

  • 6)

    To serve, crack the chocolate top with a spoon and enjoy the layers.
